Ever wondered how some of your favourite chocolate bars are actually made?
Chocolate Copycat Lab is where we take familiar chocolate-aisle favourites, pull them apart, figure out what makes them work, and then attempt the highly reasonable task of recreating them from scratch.
This edition’s targets: Coffee Crisp and Maltesers.
Over the course of the workshop, you’ll get hands-on with some of the techniques professional chocolatiers use behind the scenes — including tempering chocolate, building filled chocolate bars, creating crisp layered centres, decorating your bars like a profesh, and making glossy chocolate-coated dragées.
And because apparently one chocolate project wasn’t enough, you’ll also get an introduction to panning.
You’ll start by coating centres by hand using traditional bowl panning, then watch our professional panning machine do its very satisfying little spinny thing. Finally, you’ll polish your batch with confectioner’s glaze for that shiny chocolate-shop finish.
This is a small-group, technique-focused workshop designed for guests with some prior experience working with chocolate or baking. Curiosity helps, and a willingness to get chocolate on yourself is practically guaranteed.
By the end, you’ll head home with:
- 3 Coffee Crisp-style chocolate bars
- Approximately 50g of Maltesers-style dragées
- Recipe cards so you can attempt your own copycat operation at home
- Your finished chocolate, packaged up and ready to show off, share, or suspiciously disappear on the way home
Fair warning: you'll probably never walk through the chocolate aisle the same way again.
